CRISPY SWEET POTATO WAFERS/CHIPS

Method: 

Step 1: Peel the skin off the sweet potato and wash

Step2: Use a vegetable grater to grate the sweet potato into wafer like thin slices

Step 3: Take a large bowl of water and Soak the grated sweet potato for 10 mins at the least

Step 4: Heat the oil in a frying pan/vessel preferably iron one like shown in the picture

Step 5: Spread a large muslin cloth and dry each slice/wafer of sweet potato. It can be done in steps as well, not all of them need to be dried simultaneously, but as much required for first batch of frying can be dried first.

Step 6: After the oil has heated up sufficiently, transfer the dried sweet potato into it and deep fry.

Step 7: If you prefer very crispy slices/wafers, then fry them twice. Second time on medium heat so that they do not get burnt.

Step 8: Transfer the crispy wafers into a large bowl. Add salt as required and mix it well.

Crispy sweet potato chips/wafers ready to serve.

Ingredients needed: 
1. 5-6 or 1kg of Sweet potato 2. Oil for frying - 1/2 litre, preferably coconut or groundnut oil and not refined oil.
